Indeed the other one has more dynamics , original tone and characteristics as well more focused separation of tone between
the more transparent sound sources and the artificial processed ones.
A Quick test done in 15 minutes to test latest Garageband "X" , stock instruments and sound tools.
Garageband has always been a fast songwriting tool but the latest incarnation brings advanced compression and Eq among other nice features such as new guitar models and drums.
Please feel free to comment do you notice any difference / which one sounds better the 64 bit version with interpolation or the standard one.
Another example of Ultra channel in use is is how the Ultra-channels O-pressor module
together with the compressor and EQ-glues individual sound sources together within the mix.
in this example very large batch of multi channel drums are sonically tied together giving also similar results as the original Omnipressor - loud sounds are quieter and quieter sounds louder, and they blend in together adding also sort of 'dynamic punch' - between heavy phrases of the
sound sources.

We found the micro-pitch shifter + dual stereo delays - giving instant results on widening and deepening for example guitar tracks and being a fast tool of creating more focused sounds in the lead instruments on an relatively (subjectively) non-destructive and transparent way.
The five band equaliser with five quick slot’s and individual parameter knobs shines.
If you have used anything from h3000 to h8000 or Eclipse - units. you will (probably) notice that the Eventide spark is there.

The "More Dynamics" is too quiet.
I'm not in the camp of using max compression to get sky-high volumes but I'm some where in the middle... believing that a moderate amount of compression is good.
