I'm usually midi composing with my mouse putting down the notes first and worrying about the attack and dynamics later. It's just too hard wrapping my head around 20 parts at once otherwise.
I also use a different individual trumpet for each part and play then individually so they're not going to sound at the same time anyway. Another thing is if you're using chords, make sure you don't select "section" for the chords because the entire section will play each note. You'll end up with 6 french horns on each note. Just a warning here. Use the solo french horn.
Also if you're using a score editor and scoring. You're going to need to quantize a copy of it so that notes come out at the right point in the in the score. Otherwise you're looking at a mess in your score.
A book I'd recommend is the Gilreath book on Midi Orchestration.
