How do you set each audio track to have it's own separate audio input? Is this even possible in S1?

The easiest way is to select the menu item Track: Add Tracks For All Inputs. Use the audio I/O setup grid matrix to determine which inputs are actually turned on and if they are mono, stereo or both.

You pick from among the available inputs right on the track.
